How to make tofu skin rolls

1. Remove the roots of soybean sprouts, wash and cut leeks into 8cm long segments, cut off the old roots of enoki mushrooms, leaving 8cm of the mushroom cap downward, wash and peel carrots and cut into thin strips, cut off the old stems of pea sprouts, wash and clean chives, cut one into chopped green onion, and cut the other into segments

2.12 Cut the pork tenderloin into 8cm long strips and put them into a bowl. Add chopped green onions, cooking wine and dry starch and mix well. Coat the strips with a thin layer of starch.

3.21 Heat the oil in a wok over high heat until it is 50% hot, add the shredded pork and stir-fry.

4. When all the shredded meat turns grayish white, add 1 teaspoon of salt, mix well and serve, leaving the bottom oil in the pot for later use

5. Bring the water in the pot to a boil over high heat, add the remaining salt, and blanch the leeks, enoki mushrooms, carrot shreds, and pea sprouts.

6.1 Cut the tofu skin into rectangles with a width of 7cm and a length of 10cm

7.2 Take it out and put it in cold water to cool

8. Place appropriate amount of shredded pork, bean sprouts, leeks, enoki mushrooms, shredded carrots and pea sprouts on one end of the tofu skin in parallel with the narrow side.

9. Then slowly roll the tofu skin to the other end and put it on a plate for later use.

10. Heat the oil in a wok over medium heat. When the oil starts to smoke slightly, add the chopped shallots and stir-fry until the shallot fragrance comes out. Add the sweet noodle sauce and continue to stir-fry for 30 seconds.

11. Then add water (100ml) to dissolve the sweet noodle sauce and add fine sugar, stir fry evenly, and finally thicken with water starch.

12. Pour the sauce on the bean curd rolls.
