1. Techniques for peeling live shrimp

It is easier to remove the shells from prawns than from dead ones. Because the shrimp shell and shrimp meat of fresh shrimp are tightly connected, if you tear off a piece of shrimp shell, you may also take off a piece of shrimp meat. So, how to shed live shrimp?

1. Prepare fresh prawns

2. Use a brush to clean the surface of the prawns, because the prawn shells will be used to make prawn oil.

3. Cut off the shrimp whiskers and legs

4. Put the shrimps into a container, wrap them with plastic wrap, and freeze them in the refrigerator. If there are 30 shrimps per pound, freeze them for 1 hour. Increase or decrease the time depending on the size of the shrimp. The purpose of freezing is to basically separate the shell and the meat. Note: If the freezing time is too short, the shell and meat will not separate. If the freezing time is too long, the shrimp meat will release water after thawing.

5. After taking out the frozen shrimp, pinch the shrimp body before starting to shell it to further separate the shell and meat of the shrimp. At the same time, use a toothpick or the tip of a small arrow knife to pick out the shrimp stomach (sand sac)

6. Use scissors to cut the skin of the shrimp from head to tail.

7. Cut off the shell of the shrimp tail.

8. Pinch the shrimp body with your left hand, and use your right hand to separate the shrimp shell and shrimp meat from the shrimp tail, first forming a small opening. Then, insert the index finger of your right hand between the shrimp shell and the shrimp meat, and push toward the shrimp head with appropriate force to remove the shrimp shell. 2. How to boil shrimp oil

1. When boiling oil and making salt and pepper shrimp heads, first remove the sand from the shrimp heads.

2. Collect the shells and heads of live shrimps (220 grams)

3. Wash the shrimp heads with clean water, but keep the shrimp roe. Control moisture to prevent oil frying from hurting people

4. Wash the shrimp shells with clean water and drain the water for later use

5. Pour 220ml of salad oil into the pot over medium heat. When it is 30% hot, add the shrimp heads and cook.

6. After the water in the shrimp heads evaporates, turn to low heat and simmer, pressing the shrimp heads lightly with a spatula.

7. Turn off the heat when the shrimp heads are dry, slightly foamy, and the oil is bright red.

8. Remove the shrimp heads and drain the oil

9. Place the shrimp heads on a plate and set aside

10. Add the shrimp shells and simmer over low heat.

11. When the shrimp shells are dry, remove them and drain the oil. This is the end of making shrimp oil.

Boiling shrimp oil is a delicate and technical job. If you are not careful, you may not be able to extract the shrimp oil, or even if the shrimp oil has been extracted, it may not be red in color because it has been overcooked. It is very important to control the heat here. You can use medium heat at the beginning, and then change to low heat after the water is removed from the shrimp heads. Simmer for about 10 minutes, when the shrimp heads are dry, a small amount of foam is produced, and the oil turns red, the shrimp oil is ready, then turn off the heat, remove the shrimp heads and control the oil. The signs of well-cooked shrimp oil are: bright red color, fresh and fragrant taste.
