How to make fermented glutinous rice steamed buns

1. Knead 500 grams of flour, 450 grams of sugar and 1.5 liters of fermented rice water into a smooth dough, then cover with a wet cloth and place in a warm place to rise for 3 hours.

2. Allow the dough to rise until it is twice as large.

3. Knead the proofed dough for 35 minutes to break the bubbles in the dough. Then divide it into small pieces of similar size and knead them into smooth buns with your hands.

4. Place the prepared steamed buns in the steamer and let them rise for another 40 minutes.

5. When the steamed buns are twice as big as when they were just made, you can turn on the fire and steam them. After they start to steam for 15 minutes, turn off the heat and simmer for another 5 minutes.
