Cut the pork belly into strips and set aside (you can consider "one belly for two uses" and set aside a large thin slice of belly, stir-fry it after boiling or mix it with red oil); rinse the enoki mushrooms with clean water and put them in a basin and soak them in warm water for later use; soak the red dates and wolfberries for a while, wash them, drain them and set aside; add enough clean water to the soup pot at once, put the pounded ginger pieces and the belly slices into the pot and boil over high heat, and skim off the floating foam after the soup boils

3. Unfold and clean the soaked shimeji mushrooms, cut off the hardened stems, wring out the water and pour into the pot. Bring the pot to a boil again, turn to medium-low heat, cover and cook. After boiling for about an hour, add pitted red dates and wolfberries and continue to boil for about 30 minutes. Add salt and pepper to taste before removing from the pot.
