How to make Tremella and Lotus Seed Soup

1. Prepare ingredients: natural Tremella, water (the Tremella sold in the market nowadays is generally cultivated in bags. It is said that the nutritional value of this kind of Tremella is not very high, so I bought some natural Tremella, but it is very difficult to clean. It took me a long time to clean it.)

2.12 Soak the Tremella in clean water until it becomes soft, about half an hour. But if you are not in a hurry, soak it as long as possible, about two or three hours, and change the water every hour. This will make the Tremella easier to stew and some bad ingredients in the Tremella itself will dissolve into the water.

3.21 Wash the soaked white fungus and remove the roots. If there is copper-green color in the white fungus and it feels soft and rotten, it is rotten and should be picked out.

4.1 Wash the lotus seeds and put them into the pot together (I use lotus seeds with cores. Many people think that lotus seed cores are very bitter. You can buy coreless ones, but lotus seed cores are very effective in removing heart fire and are not very bitter, so cored ones are better, hehe)

5.2 Add water according to the situation. I use an electric pressure cooker, which does not consume much water, so I added two and a half bowls of white porcelain bowls as shown in the previous picture. If you stew it over an open fire, you have to add more at one time, because natural basswood tremella is not as easy to stew as bag-made tremella.

8. An appropriate amount of multi-crystal rock sugar (I didn’t have yellow rock sugar this time, so I just used it)

9. After stewing, turn off the power. Add rock sugar and wolfberry while the Tremella soup is still hot and stir well. If you like to eat dates or pears, you can also put a few. Note that red dates and pears should be added after the white fungus is stewed. Then plug in the power but do not cover it, and stew it for a few minutes without pressure. If wolfberry, rock sugar and red dates are added at the beginning of stewing, the color of the soup will become opaque and the taste will be a bit sour, so be sure to add them after stewing.
