How to make oxtail in golden soup

1. Chop celery, carrots and onions into small pieces

2. Put the oxtail into the pot with cold water, bring to a boil, turn off the heat when foam appears, take out the oxtail and rinse it with warm water

3. Heat the pan and add butter

4. After the butter melts, add onion and sauté until fragrant

5. Add the blanched oxtail and stir-fry

6. Stir-fry until all sides are cooked through and serve (discard the blackened onions)

7. Add a little oil to the pan, add onion, celery and carrot

8. Stir-fry thoroughly

9. Add the fried oxtail and water, preferably enough to cover the oxtail (mine was a little less)

10. Prepare a pear. I used Dangshan pear. Peel it and cut it into small dices (it can be smaller, I am a little lazy)

11. Add the chopped pears into the pot (you can also add them after the soup boils)

12. Boil and remove the foam

13. Turn to low heat, cover and simmer for two to three hours

14. After two and a half hours, the oxtail is basically tender (I used a cast iron pot, which cooks faster). Add some salt to season and you can start eating. (If you want to be picky, you can filter out the celery pieces and such, I eat them all together)
