Water surface : 300g whole wheat flour (ordinary flour, high-gluten flour are both fine, don't use low-gluten flour) 170-180g water (the water absorption of flour is different, so the water should be poured in batches. Cold water is fine, but warm water can be used if you want faster fermentation) 5g yeast powder, 2g baking soda, 15g cooking oil, 3g salt

Sugar dough : 80g water, 20g soft sugar, 10g dry flour

1. Before going to bed the day before: Put the flour in a bowl, add yeast powder, baking soda and salt and mix well.

2. Pour in clean water and stir into small pieces, then knead into a smooth dough. Because the water absorption of flour is different, water can be poured in batches. The kneaded dough is very soft, but it is definitely not the kind that is so thin that it sticks to your hands. It just needs to be as soft as your earlobe.

3. Add 15 grams of cooking oil and knead the oil into the dough. The dough will feel greasy at first, but you won’t see the oil after kneading it. The dough will just feel very moist.

4. Put the kneaded dough into a bowl, cover it with sugar and let it stand for 10 minutes. Then knead it again and cover it to ferment.

5. Let the dough rise to twice its size. It’s okay if it rises a little bigger.

6. The next morning: If you use your hands to open the dough, you will find that there are many holes. The dough is very soft but not very thin. Take it out of the bowl. Because there is oil in the dough, it will not stick. Just wipe it in the bowl with your hand and it will all be taken out.

7. Apply a layer of oil on the workbench with your hands so that the oil will not stick to your hands. Put the fermented dough on the panel and knead it into a ball. Set aside 80 grams of dough for making the sugar crust.

8. Use a rolling pin to roll the remaining dough into large sheets 0.5 to 1 cm thick (not too thin, otherwise it will not be soft inside but crispy after frying, it depends on your preference), and cut it into a length and width that suits you according to the size of your pot.

9. Let the cut strips sit for a few minutes before continuing, so that they will be more fluffy when fried. Stack two pieces of dough together and then place the chopsticks vertically in the middle of the dough. Press both ends of the chopsticks with your hands to make a mark in the middle of the dough. Press a little deeper so that the two pieces of dough will not separate when frying.

10. Hold the two ends of the dough and stretch them a little longer.
