Fried river shrimp

Material

500g fresh river shrimp, 80g granulated sugar, 1 tablespoon (15ml) soy sauce, 2 tablespoons (30ml) Shaoxing wine, 1 teaspoon (5g) salt, 1 scallion (5g), 1 piece of ginger (5g), 1 shallot, 800ml oil (30ml oyster sauce)

1. Rinse the fresh river shrimp with clean water, drain and cut off the legs.

2. Wash the scallions and cut them into chopped green onions, peel the ginger and chop it, wash the chives and chop them.

3. Heat the oil in a pan over medium heat. When it is 60% hot, put the small river shrimps in. Fry the shrimps until the shell turns red. Remove from the pan, drain the oil and set aside.

4. Leave some oil in the pot, heat it up, add minced ginger and chopped green onions and stir-fry until fragrant, then add granulated sugar, Shaoxing wine, soy sauce and salt, turn to low heat and stir-fry the seasonings in the pot until thick.

5. Then put the small river shrimps into the pan and stir-fry for a few times so that the surface of the small river shrimps can be evenly coated with the sauce.

Finally, place the fried river shrimps on a plate and sprinkle with chopped green onions.

Spicy Fried River Prawns

Material:

Fresh river shrimp, green pepper, chili sauce, onion, ginger, sugar, chicken stock

1. For larger river shrimps, remove the shells from their heads. For smaller ones, use scissors to cut off the top 1/3 of the shrimp heads and the shrimp whiskers. Then rinse them repeatedly with clean water to ensure there is no sand or mud. Drain and set aside. Slice the green peppers, and cut the green onions and ginger into sections for later use.

2. Heat the wok without adding oil, add the green peppers and roast them until they are fragrant. Take them out when you smell the spicy taste or feel that the peppers have become soft.

3. Add oil to the pan, heat it up, add the cleaned river shrimp, stir-fry quickly, and when the shrimp body starts to turn red, pour the previously fried green pepper, onion, ginger, and chili sauce into the pan and mix well;

4. Add appropriate amount of sugar (1 teaspoon is enough) and chicken essence according to personal taste, and then serve;

For this dish, you must fry the river shrimp quickly, as fresh river shrimp can easily become overcooked.

You can add chili sauce according to your own preference, or you can use soy sauce instead. If the chili sauce at home is very salty, you don’t need to add salt. If you prefer a stronger taste, you can add 1 teaspoon of salt when roasting the chili.
