How to make steamed buns with salt and pepper

3.1 When the dough has fermented to 2 to 3 times its size, take out the dough and stretch it to a larger area. Add the chopped Sichuan pepper leaves and two spoons of salt.

4.2 Drain the water from the pepper leaves and chop them into small pieces.

5.Pinch the edges to close the opening. Knead repeatedly until the pepper leaves are evenly kneaded. Knead the dough until smooth.

6. Knead the dough into strips. Use a knife to cut off the two ends first, and then cut the rest into steamed buns of appropriate size.

7. Shape the bun, knead the two cut ends together to make a round bun. Let rise again for half an hour.

8. Add water to the steamer and turn on the fire. Reshape the steamed buns that have been fermented for the second time and put them into the steamer to ferment again using the water temperature. Remember not to cover the pot at this time. Wait until the water in the steamer boils and there is a lot of steam, then cover it. Steam over high heat for twenty minutes.
