King Cake Recipe

1. Put the flour into a large bowl, add appropriate amount of water and salt, knead into a shiny dough, and use a sharp knife to make a cross on the dough. Wrap in cling film and refrigerate for at least 1 hour or overnight

2. Take the butter out of the refrigerator in advance and place it at room temperature. After the dough has been refrigerated, take it out and use a rolling pin to roll the dough in four directions along the cross direction to form a flat cross shape.

3. Wrap in the butter that has been pressed into a square shape in advance. Remember that the hardness of the butter should be the same as that of the dough! Fold the bottom dough upwards to completely enclose the butter. Fold the top dough down and wrap it with butter. Roll it horizontally with a rolling pin. Fold up the left and right sides of the dough, and use a rolling pin to gently roll out the butter and dough together.

4. Use force to roll the dough horizontally until the vertical length of the dough is about three times the horizontal length. Fold the upper third of the dough down and the lower third up, flatten it with a rolling pin, and turn the dough 45 degrees clockwise to make a rectangular shape.

5. Repeat the previous steps and do another round, thus completing two rounds. Use your fingers to make two handprints on the bottom of the dough as a mark, wrap it with plastic wrap, and refrigerate for 1 hour. Usually, at least 6 rounds of Western-style puff pastry are required. After 1 hour, take out the dough and continue to make two rounds according to the previous steps. And so on, after completing 6 rounds, let the puff pastry stay in the refrigerator for 2 hours before use.
