How to make Qingming dumplings

The countdown to the National Day holiday has begun. You, who have been away for a long time, must have already planned to go out for fun. When you travel, you are bound to taste the local food. But if you can't adapt to the local climate, it will definitely be very uncomfortable. So, you'd better make delicious food at home and take it out. Now, let me introduce to you how to make Qingming dumplings.

1.1 Boil water in a pot, add a little baking soda (optional), and blanch the wormwood.

2.2 Weigh the ingredients for the dough. Remove the old leaves of the wormwood and weigh 200g. Wash and drain.

3.1 Add 200ml hot water to the blanched wormwood and blend it into a fine wormwood paste in a blender

4.2 Take out the blanched mugwort immediately, rinse it with cold water and squeeze out the water

5.1 Slowly pour in hot water, stirring with chopsticks while pouring, until the batter is thick but not dry (I used 120ml of hot water in this step)

6.2Put glutinous rice flour, rice flour and sugar into a large bowl, mix them, pour in the mugwort paste and stir

7.1 Put enough water in the pot, put the mixed batter on the steamer, turn on the fire, cover the lid, and keep it on medium-high heat

8.2 Then pour in 30g of cooking oil and stir evenly with chopsticks

9. Start timing after the water in the pot boils. Open the lid after five minutes, stir the batter once with chopsticks, and continue to steam with the lid closed.

10. After another five minutes, repeat step 9 and stir the batter once. Stir every five minutes of steaming, at least twice.

11. After 20 minutes of steaming, the batter is fully cooked and its color turns into a uniform dark green. Turn off the heat, take out and let cool

12. Let the batter cool down to a temperature that your hands can handle. Take a piece of plastic wrap, scoop a spoonful of dough (about 40g) and put it in the middle of the plastic wrap. Dip your hands in cold boiled water and flatten the dough.

13. Take 20g of red bean paste, roll it into a ball and place it in the middle of the dough

14. Lift the four corners of the plastic wrap, fold them together, wrap them into a ball, roll the plastic wrap tightly, and place it with the closed end facing down.

15. Wrap them all up, 20 pieces in total
