Homemade braised ribs

The bones chosen for braised ribs are larger and different from ordinary small ribs. The preparation time of ribs is longer than ordinary ribs, but the ingredients and materials prepared are similar, because the ingredients for braised are basically the same. When cooking, they need to be blanched in the pot in advance, because this can clean up the blood and some secretions on them.

Braised Spare Ribs

The cooking method is almost the same as braised pork, and the ribs are fresh, sweet and delicious.

Material

400g spare ribs, appropriate amounts of ginger, green onions, star anise, fennel, cinnamon, cardamom, bay leaves, cloves, and peppercorns, appropriate amounts of salt, MSG, sugar, cooking wine, soy sauce, and salad oil

1. Chop the ribs into 5 cm pieces, blanch them in boiling water to remove the blood, and set aside.

2. Slice the ginger; wash the green onions, remove the two ends, and tie them into a green onion knot.

3. Put a little salad oil in the pot, heat it over high heat, then turn to low heat. Add white sugar.

4. Slowly stir-fry the white sugar over low heat. When the sugar melts, changes color and starts to bubble, immediately pour in the ribs and stir-fry evenly.

5. Add ginger slices, peppercorns and all the seasonings. After the aroma comes out, add a small amount of cooking wine and soy sauce and stir-fry for a while.

6. Add appropriate amount of hot water, salt and green onion knots.

7. After boiling over high heat, skim off the foam and simmer over low heat for 40 minutes until the ribs are cooked through.

8. Remove the onion, ginger and other large pieces of seasoning from the pot.

9. Cook over high heat until the soup thickens, then add appropriate amount of MSG and serve.

Braised Pork Trotters

Introduction: Rich and delicious, fat but not greasy.

Material

Main ingredients: 750 grams of pig's trotter, 13 grams each of salt and green onion, 8 grams of ginger, 25 grams each of sesame oil and cooking wine, 5 peppercorns, 50 grams of rock sugar, and 1300 grams of soup.

1. Shave the hair off the pig's trotters, clean them, chop off the claws and split them into two halves. Boil them thoroughly in water and then put them in cold water.

2. Crush the ginger and green onion and set aside.

3. Heat a little sesame oil in a spatula, add rock sugar and fry until it turns purple, then add soup and adjust to light red.

4. Add pig's trotters, cooking wine, onion, ginger, salt and peppercorns. After the soup boils, remove the foam. Cook over high heat until the pig's trotters are colored. Then switch to low heat and simmer until the sauce is thick.
