How to cook the whole pig's trotter

1. Shave the hair off the pig's trotters, clean them, chop off the claws and split them into two halves. Boil them thoroughly in water and then put them in cold water.

2. Crush the ginger and green onion and set aside.

3. Heat a little sesame oil in a spatula, add rock sugar and fry until it turns purple, then add soup and adjust to light red.

4. Add pig's trotters, cooking wine, onion, ginger, salt and peppercorns. After the soup boils, remove the foam. Cook over high heat until the pig's trotters are colored. Then switch to low heat and simmer until the sauce is thick.

Beer Braised Pork Trotter

Material

1 pig's trotter, 250ml beer, some soy sauce, some braised soy sauce, some boiling water, some rock sugar, some green onion, some ginger, some chives, some star anise

1) Wash and chop the pig's trotters.

2) Add ginger slices and cooking wine to the pot and bring to a boil. Add pig's trotters and cook for 10 minutes before removing from the pot.

3) After taking out the pig's trotters, quickly throw them into the prepared cold water and rinse them for a while to make them more elastic.

4) When the pig’s trotters are cool enough, fry them in a 60% to 70% hot oil pan.

5) After the color changes slightly, turn to medium-low heat, add rock sugar and stir-fry until colored. Add ginger slices, scallion segments, and star anise and stir-fry until fragrant.

6) Add a small amount of boiling water and bring to boil again.

7) Add beer so that the ingredients just cover the pig's trotters.

8) Add 2 spoons of soy sauce and 2 spoons of braised soy sauce, mix well and bring the soup to a boil.

9) Transfer to a casserole and turn to low heat, add shallot knots and simmer for 1-1.5 hours.

10) When the pig’s trotters are soft and rotten, open the lid and turn to high heat to reduce the sauce.

11) Cook until the soup becomes thick, then turn off the heat and sprinkle with chopped green onions.
