3. Roll the dough into a ball, cover with plastic wrap, and place in a warm place for basic fermentation

4. When the dough expands to 2.5 times its size, dip your finger in flour and insert it to check. If the hole bounces back slightly, fermentation is over.

5. Take out the dough and deflate it, divide it into 4 25g and 4 50g doughs, roll them into balls and relax for 15 minutes. Put the remaining dough in the refrigerator to freeze (for making golden horns next time)

6. Roll the four large doughs into cones, flatten them, and apply a layer of coconut filling. Do not apply the filling near the bottom. Roll them up from top to bottom and pull the unfilled part to the bottom and stick them together.

7. Place the finished roll on a baking tray and flatten it. Take a small portion of 25g dough and roll it into a long cone shape and place it on the side of the snail shell.

8. After shaping, place it in a warm and humid place for final fermentation. After fermentation, brush the surface with egg liquid

9. Preheat the oven to 180 degrees, middle layer, lower the heat for 15 minutes, move to the upper layer, 200 degrees, and bake for 3 minutes until the surface is colored. After cooling, put the chocolate into a piping bag and melt it in hot water, then draw the snail eyes and mouth.

10. How to make the coconut filling: 1. Beat the softened butter at room temperature, then add the granulated sugar and mix well. 2. Add the egg liquid in batches and mix well (the butter has not melted after the egg liquid is added, so I melted it with hot water). 3. Add the coconut and mix well. 4. Add the milk and mix well. Let it stand for a while to let the coconut absorb enough water before use.
