Tomato Winter Melon Pork Rib Soup

The nutritional value of tomato, winter melon and pork ribs soup is quite rich. It contains many nutrients that our human body lacks, so we can fully absorb them after drinking this soup, but if you want to make it delicious, you still need some skills. The most important thing is to process all the ribs well. You need to use high heat at the beginning and then gradually reduce the heat.

Wash the ribs and chop them into small pieces 5 cm wide and long. Heat lard or vegetable oil on a high fire, then add the spareribs and fry until they turn grayish white. Fry the ribs until dry, add salt water and ginger and simmer for a while, then add enough water to cover the ribs. After simmering on high heat for half an hour, add MSG, cooking wine and scallions, then move to a sand pot and simmer on low heat for 2 hours.

Before boiling, the ribs must be blanched in boiling water for 5-10 minutes, or boiled directly in boiling water for a few minutes, then rinsed with cold water to wash off the dirt on the bones, then add enough cold water to make soup, put onion segments, ginger pieces, 2 cloves of garlic in the soup, and you can also put your favorite Chinese medicinal materials, such as the commonly used Adenophora, Astragalus, Angelica, Codonopsis, Lycium barbarum, jujube, etc., which can not only increase the flavor of the soup, but also strengthen the body. Then cover the lid and cook over medium heat until the soup boils, then reduce the heat and simmer for about 1 and a half hours. Add salt at the end, no need to add MSG.

3. Some medical experts say that you can add vinegar after the water boils, as vinegar can dissolve the phosphorus and calcium in the bones into the soup.

4. Use water chestnuts, green and red radish to cook pork bones. Simmer it for two hours and you can drink it. This soup is still sweet without adding MSG.

4. If it is sheep bones, then add some ginger, red dates, adenophora, and polygonatum to enhance the taste.

Ingredients: 500g pork ribs, 500g lotus root, 1 piece of ginger, salt, rice wine

Preparation method: 1. Use a knife to flatten the lotus root to loosen the lotus root flesh, then cut it into a rolling knife, and then marinate it with salt and set aside;

2. Put the washed and chopped ribs directly into the pot, add cold water and bring to a boil. Use a spoon to skim off the blood bubbles, add a piece of beaten ginger, and when the pot boils, add the lotus root and stew together until cooked.

3. Adjust the saltiness according to your taste. The stewed lotus root soup will have the sweet aroma of lotus root.

Bitter Melon and Pork Ribs Soup

Ingredients: 500 grams of bitter gourd, 400 grams of spare ribs, appropriate amounts of scallion segments, ginger slices, Shaoxing wine, salt and MSG.

Preparation method: 1. Remove the stem and pulp of bitter melon and cut into pieces; wash the ribs and cut into small pieces.

2. Add appropriate amount of water to the pot, bring to a boil, put in the ribs and cook to remove the blood foam, then remove and wash.

3. Put the ribs and water in a pot, bring to a boil over high heat, skim off the foam and add onion, ginger and Shaoxing wine. Reduce heat and simmer until the ribs are well-cooked. Add bitter gourd and cook for about 10 minutes. Add salt and MSG to taste.

Microwave method: Add pork ribs and water, boil the soup over high heat for 6 minutes, skim off the foam and add scallion, ginger and Shaoxing wine, then cook the pork ribs over medium-low heat for 20 minutes. Add bitter gourd and cook over high heat for 3 minutes, then medium-low heat for 10 minutes. Add the bitter melon after the ribs are cooked, otherwise the melon will easily fall apart; use chicken powder instead of MSG to make it taste better; this soup has the effect of refreshing and relieving fever, and it is easy and convenient to make in a microwave, making it a great summer delicacy.
