How to make delicious pickled beans

Pickling beans is actually the same as pickling ginger. The methods of pickling beans are different in every region, but in Sichuan, the method of pickling beans is similar to that of pickling sauerkraut. There are many ways to cook the pickled beans. The most common way is to stir-fry the pickled beans with meat, which is a good side dish to go with rice. Soaked beans can be added to some dishes with strong fishy smell to enhance the flavor. But when making pickled beans, how can we make them taste better?

1. Wash the beans and dry them in the sun for half a day, then let them cool naturally;

2. You have to bask in the sun so that your hands can’t stop pulling;

3. Take 10 beans, think about the amount for one meal, and put more if you eat more;

4. Fold them into long strips, leaving one strip unfolded, the length is up to your preference;

5. Tie up the folded beans with the unfolded one;

6. You can just put it into the jar, which makes it convenient to take when eating. It is also very convenient when cutting.

Spicy Cowpea (Bean)

Material

1 pound of beans, some minced garlic, a little Lao Gan Ma chili sauce, some salad oil, some salt

1. Pinch off the ends of the beans and wash them clean.

2. Put water in a wok and bring it to a boil. Put the beans in and blanch them for about 3 minutes.

3. Spread out the blanched beans to dry (it is best to place them one by one on bamboo poles like you do with dried beans). Be careful not to make them too dry, as this is different from making dried beans.

4. Cut the dried beans into small pieces

5. Put a proper amount of salad oil in the wok, stir-fry the minced garlic, add the green beans and stir-fry, add a proper amount of salt and a little Lao Gan Ma chili sauce. If you are not afraid of spicy food, add more. Stir-fry for a few times and serve.

Stir-fried dried shrimp with long beans

Material

Long beans, dried shrimp, minced garlic, chili paste, oil, a little salt

1. Wash and cut long beans into sections, and mince dried shrimps.

2. Saute minced garlic and chopped dried shrimps.

3. Add chili paste and long beans and stir fry.

4. Add salt and water, cover and simmer until the long beans are cooked and soft and the water is dried up.
