How to make lotus-flavored pork ribs rice

1. Heat oil in a pan, add star anise and cinnamon and sauté over low heat until fragrant. Remove from the pan and keep the oil aside. Soak the glutinous rice at least overnight in advance, longer is better.

2. Soak the ribs in cold water to remove blood, wash them thoroughly, add shredded green onion and ginger, dark soy sauce, light soy sauce, pepper powder, and oil and marinate for more than 2 hours. Slice the mushrooms. Soak the dried lotus leaves in advance and blanch them in hot water for half a minute until they are soft. If it is fresh lotus leaves, you can use them directly after washing, or you can blanch them. But no matter whether it is dry or fresh, the blanching time should not be too long.

3. Mix the marinated spareribs, remaining sauce, glutinous rice, mushrooms and salt. If you don’t like ginger, you can pick out the shredded ginger.

4. Take two lotus leaves and overlap them, put in half the amount, pour in some of the sauce at the bottom of the container, and wrap it tightly.

5. Repeat the same steps for the other two lotus leaves.

6. Add enough water to the steamer, place the purse flat on the steamer, and steam it over high heat for half an hour. Turn the purse over to prevent the glutinous rice on top from not coming into contact with the sauce and becoming difficult to steam through. Continue steaming over medium heat for 1 hour.
