Thai Curry Fried Crab

1. Dice onion, mince garlic, cut red pepper into strips, wash and cut celery into strips

2. Cut the lemongrass into sections and wash the lettuce and cut it into small pieces

3. Coconut milk, Thai curry, turmeric powder used

4. Wash the crab shell, remove the internal organs and other dirt, cut the crab in half, then chop off the crab claws, cut the crab belly in half again, and loosen the crab claws.

6. Heat the pan and add appropriate amount of oil

7. Dip the cut part of the crab in cornstarch and shake off some excess cornstarch before putting it into the frying pan.

8. Fry in oil with the dipped part facing downwards

9. Fry until it solidifies and changes color.

10. Add the base oil (you can add more as needed) and stir-fry onion, garlic, celery, and red pepper.

11. Add Thai curry powder and stir-fry

12. Stir-fry evenly

13. If the color is not enough, add a little turmeric powder and lemongrass and stir-fry until fragrant.

14. Add appropriate amount of soup or water (I use a little more water because everyone said they want to mix it with rice)

15. Add soy sauce, oyster sauce and sugar for seasoning

16. Add appropriate amount of coconut milk

17. Cover and simmer for about five minutes

18. Add the beaten egg starch solution

19. Add a few drops of fish sauce, lime juice and coriander to the sauce

20. Serve and you are done.
