Homemade smoked fish recipe

1. Wash the fish, cut it into pieces, wipe it dry with kitchen paper or kitchen towel, and put it into a large bowl. Add dried red pepper, peppercorns, minced ginger, minced garlic, chopped green onion, salt, Shaoxing wine, and homemade mixed soy sauce. Wear disposable gloves, mix the fish pieces and the marinade thoroughly, seal it in a fresh-keeping bag and put it in the freezer for about 1 week.

2. After the fish pieces are thawed at room temperature, spread them out and place them in a ventilated place to let them dry naturally. If you place them on an outdoor balcony to dry, be sure to cover them with a gauze to prevent flies and insects from biting and crawling.

3. Heat a pan and add a lot of oil. When the oil is hot, spread the fish pieces in the pan and fry them until golden and crispy. Remove from the pan and drain the oil for later use.

4. Leave some oil in the pot, add garlic, ginger, star anise, cinnamon and other spices, and stir-fry over medium-low heat until fragrant.

5. Pour in Shaoxing wine, light soy sauce, dark soy sauce, rock sugar, and salt to taste. Pour 1 bowl of water into the pot and bring to a boil over high heat.

6. Add the fried fish pieces, stir-fry the fish pieces and soup evenly, then simmer over medium heat. During the simmering process, the fish pieces need to be turned over to ensure even coloring. When the fish is well seasoned (about 30-40 minutes), pour 1 teaspoon of balsamic vinegar into the pot, stir well and serve. Sprinkle with fried sesame seeds, chopped green onions, etc. according to personal taste.
