1. Set aside pork belly, sliced ​​scallions and ginger, cinnamon, bay leaves, and star anise

2. Dice mushrooms and onions

3. Pour oil into the pan, heat over medium heat, add chopped onions when it is 50% hot, stir-fry until slightly charred and set aside

4. Heat a little oil in the pan and stir-fry all the ingredients until fragrant. Add the diced meat and stir-fry until it changes color and produces oil.

5. Add diced mushrooms and fried shallots and stir-fry. Add cooking wine, rock sugar, light soy sauce and dark soy sauce in turn and stir well. Because both light soy sauce and dark soy sauce are salty, there is no need to add salt

6. Add hot water, enough to cover the meat by 2-3cm, and bring to a boil over high heat. Simmer over low heat for more than 1 hour, turning the pan frequently to prevent the meat from sticking, until the meat is soft. (Half an hour before serving, add boiled eggs to stew together. Wash the broccoli or green vegetables and put them into a boiling water pot. Add a little oil and salt to blanch them. Put the boiled broccoli and braised eggs in a bowl of white rice, and then scoop a large spoonful of braised meat on top.)
