How to make steamed dried tofu with chopped pepper and black bean sauce

1. Wash the dried tofu and put it into the pot

2. Pour in appropriate amount of old marinade

3. Turn off the heat after the marinade boils

4. Let it cool down and put it into a sealed box with the marinade. Refrigerate it for 24 hours to make it taste good. Take it out and turn it over. Discard the marinade that has been used to marinate the dried tofu. Do not pour it back into the marinade pot.

5. Cut the marinated dried tofu into large pieces

6. When the oil in the pan is hot, add the flattened black beans and minced garlic. After the aroma comes out, scoop some of the oil, black beans and minced garlic into the large bowl with the dried tofu.

7. Use the remaining oil to fry the fat and lean meat

8. Add ginger slices, fry until the meat slices are slightly yellow, add cooking wine and balsamic vinegar

9. Put the fried meat slices on the dried tofu, add appropriate amount of salt, light soy sauce and dark soy sauce, mix well and marinate for more than 1 hour

10. Stir in the middle and spread a layer of chopped pepper before steaming

11. After the water boils, steam for 15 minutes.
