How to make braised pork with thousand-layer tofu

1. Put water in a pot, put the washed pork belly strips into the pot, add onion, ginger and cooking wine to boil, skim off the foam after the water boils, continue to boil over medium-high heat for about 15 minutes, remove and cut into pieces for later use

2. Wash the thousand-sheet tofu and cut it into small cubes. Slice the ginger, peel the garlic cloves, and cut the green onions into sections for later use.

3. Heat a wok and add a little oil. Add ginger slices, scallion segments, garlic cloves, cinnamon, star anise, and dried chili peppers. Add the meat into the wok and stir-fry over high heat until the fat comes out. Then, continue to stir-fry over low heat until the skin shrinks and becomes slightly burnt.

4. Add rice wine to the pot, pour light soy sauce and dark soy sauce on it, sprinkle with crushed rock sugar and stir fry evenly, add broth (or water), bring to a boil over high heat and then simmer over medium-low heat.

5. When the pork belly is simmered until it is soft, fragrant and delicious and the soup begins to thicken (about 45 minutes), pour the tofu cubes into the pot and stir-fry evenly.

6. Use the rich gravy in the pot to simmer the tofu cubes over low heat until they are well-seasoned. Sprinkle with green garlic and stir-fry for a few times before serving.
