Prepare spices for the soup: two star anise, three cloves, black peppercorns (there are no white peppercorns at home) and white pepper powder. There should be some onions left, but there are none left at home. 3. Put the beef bones and ginger slices into a pot and boil them to remove the blood, then rinse them clean. 4. After removing the blood from the beef bones, add water and spices into a cooking pot and bring to a boil. Turn to medium heat and simmer for one hour. Turn off the heat and leave overnight. 5. There is a layer of butter on the surface of the overnight beef bone soup. Remove the butter. 6. Remove the butter from the beef bone broth. Continue to boil over high heat until the beef bones and spices have a special aroma. At this time, cut an onion and boil together (I didn’t put onion this time because I didn’t have any at home) 7. Prepare the rice noodles. 8. Take out the amount you are going to eat and soak it in cold water for about half an hour. 9. Soak until the shahefen turns white, then take it out and drain the water. 10. Prepare beef slices. 11. Prepare beef balls. (If you like, you can also prepare beef tripe and roasted beef tendon. I didn’t prepare these today because my family doesn’t like them.) 12. Blanch the beef balls in hot water first. 13. Put the blanched beef balls into the cooked beef bone soup and bring to a boil. 14. Boil the beef in water and put it into a large bowl with rice noodles. 15. Finally, pour the boiled beef bone soup into the prepared rice noodles bowl (the soaked rice noodles do not need to be cooked and can be eaten with hot soup). When eating, you can also prepare mung bean sprouts, basil and chili peppers, garlic chili sauce and seafood sauce for dipping the beef.
