It will be easier to cut into slices if it is a little harder.

How to cut chicken breast:

1. Freeze the chicken firmly but not hard. Using a clean cotton kitchen towel between your hands, grab the chicken skin and peel it off and discard. After skinning the chicken, wash the towel for later use (use a kitchen towel or paper towel to give you a better grip).

2. Place the whole skinless chicken breast on the chopping board, meaty side down; make a small cut between the membrane and cartilage in the V-shaped area at the neck end, using a sharp knife or kitchen scissors to cut off the cartilage. Use your thumbs to press on either end of your sternum to create a lever effect.

3. Grasp the chicken breast with both hands and slowly bend the two ends backward to break the sternum. Use your fingers to pull the triangular sternum along both sides to loosen it; remove the bone. Make sure to remove all of the breastbone. Check to see if there are any broken bones left. Use the tip of the knife to gently cut into the chicken, making short cuts to separate the cartilage.

4. Cut the whole chicken breast in half lengthwise into two equal-sized parts. Each part can be eaten separately. Chicken can be made into many different delicious dishes, whether you're using Chinese-style cuts or dicing, skinning, and deboning a chicken for other dishes, now you know how to make the most of a chicken and put it on the table instead of throwing it in the trash.
