In our daily diet, mushrooms are a common food ingredient. Mushrooms taste very good and are rich in nutritional value. They contain a variety of vitamins, trace elements and fiber. Fresh mushrooms that are not eaten need to be properly stored to maintain their taste. You can usually put the mushrooms in the refrigerator, or put them in a fresh-keeping bag and put them in the refrigerator to keep the moisture of the mushrooms. How to store fresh mushrooms? The more common edible fungi include shiitake mushrooms, oyster mushrooms, pine mushrooms, tea tree mushrooms, coprinus, enoki mushrooms, and button mushrooms. The rarer ones include fir mushrooms (pine mushrooms), hericium erinaceus, bamboo fungus, chanterelles, and boletus. They are high in protein, free of cholesterol and starch, and are high-nutrition and longevity foods that are low in fat and sugar, and rich in dietary fiber, amino acids, vitamins, and minerals. Fresh edible fungi are generally difficult to preserve. Sometimes when I travel, I see some fresh, rare and precious mushrooms and want to bring some back to share with my family and friends, but the journey is too long and I am afraid that they will go bad along the way, so I dare not bring them with me. In fact, this problem can be solved. There is a secret to keeping fresh mushrooms fresh for a long time First, wash the purchased mushrooms and remove the mud and impurities at the roots. Then, prepare a basin of salt water and soak the fresh mushrooms in it for about fifteen minutes. Take them out, drain and dry them, and then store them in a fresh-keeping bag. If placed between 10°C and 25°C for five or six hours, the mushrooms will become bright in color and can be kept fresh for three to five days. If you want to preserve them for a longer time, you can put the mushrooms in the sun to dry the moisture on the surface, then put them in a jar and stack them, sprinkling a thin layer of salt powder on each layer. This way of storage can keep the mushrooms from deteriorating for more than a year. Low temperature storage First remove impurities, put it in a plastic bag (preferably with a few holes) and tie it up, then store it in a cold storage, which can keep it fresh for 7 to 10 days. Dormancy preservation After harvesting, place it in a room with a temperature above 25℃ for 3 to 5 hours to allow it to breathe vigorously, and then place it in a cold storage at about 0℃ and let it stand for about 12 hours. The shelf life is about 4 days. Controlled atmosphere preservation The purpose of preservation is achieved by artificially controlling the temperature, humidity and gas composition of the environment. Fresh mushrooms can be stored in a controlled atmosphere bag with an oxygen content of 1-2%, carbon dioxide of 40%, and nitrogen of 58%-59% at 20°C for about 8 days. Film bag controlled atmosphere storage A 0.5 kg storage bag is made of 0.025 mm thick polyethylene film. The O2 content in the bag can meet the breathing needs of the mushroom body. The oxygen supply is about 1%. The CO2 in the bag reaches equilibrium within 24 hours. A cardboard box is placed to absorb condensed water, and the bag can be kept fresh for 7 days. |
