Every summer, many cold noodles appear on the market. Basically, they are served with cucumbers, peanuts, and prepared sauces. If we make cold noodles at home, we can add some other ingredients, such as some dried shrimps to enhance the flavor. We don’t need to buy cold noodles, we can make it with ordinary noodles. This article introduces the method of making cold noodles at home. Those who are interested can try it. First, what dishes go well with cold noodles? Wash the dried shrimps and set aside. Add starch and cooking wine to the meat filling, stir and marinate for a while. Add some water to the soybean paste and stir. Wash cucumbers, white radishes, etc. and set aside. Wash and dice the garlic shoots. Chop some garlic into small pieces, add sesame oil, salt, and boiled water to make garlic juice. Slice the other part and save it for later frying with tomatoes and eggs. Fry the eggs in advance and set aside. Put some oil in a pan over low heat, add a little chopped green onion and stir-fry the minced meat. When it is 80% cooked, scoop out half of it for stir-frying with garlic sprouts! Add soybean paste to the remaining half of the minced meat in the pan. Remember to use a low heat, otherwise the sauce will be bitter. It will taste better if you add more oil to the sauce! While the fire is on, boil the water and cook the noodles. Boil it three times and pour cold water on it twice, and it's done. I do it while cooking and taking pictures at the same time. Fortunately, I'm used to it and can handle it. Heat the pan with a thin layer of oil and put the reserved meat filling into the pan first, then add the garlic sprouts. When the pan is hottest, add some light soy sauce ~ it will taste better, and season with a little salt. When frying tomatoes, I only like to use garlic in the pan, and I have to fry the tomatoes until they are a little sandy. Then I add the eggs. The tomatoes should not be soupy or too hard. Tomatoes that are a little sandy are the most delicious. The green beans are fried. Usually, we use oven-roasted peanuts, which are crushed into peanut crumbs. They are especially fragrant. If you like spicy food, you can add some chili oil. Second, cold noodles, which were called "lengtao" in ancient times. The great poet Du Fu once wrote a poem "槐叶冷淘": "Green tall locust leaves, picked and sent to the kitchen. New noodles come from the market, with juice and dregs mixed together... It's colder than snow when it passes through teeth, and I urge people to throw in this pearl." This is probably the earliest cold noodles in history. Later, Wang Yu, a poet in the Song Dynasty, also described a similar production process of "Gan Ju Leng Tao" in his poem. It can be seen that "cold soup" has become an indispensable food for people in summer since the Tang and Song Dynasties. What dish goes well with cold noodles?
