6. Add chicken essence and green onions, stir-fry evenly and season. The braised five-spice crayfish can be served.

Second method:

1. Soak the crayfish in light salt water, then scrub it clean with a small brush, remove the sand intestines and sand sacs, and finally rinse it with clean water.

2. Add a little cooking wine and marinate to remove the fishy smell. Chop ginger and garlic into fine pieces, and chop green onions into chopped green onions.

3. Heat the pan with oil until it is about 50% to 60% hot.

Fry ginger, garlic, peppercorns and red pepper until fragrant, then add the marinated shrimp and stir-fry.

4. When the shrimps are almost cooked, add sugar, white vinegar, light soy sauce, salt and MSG for seasoning, stir fry evenly, and simmer for 3 minutes. The homemade braised crayfish is ready.

2. Use scissors to cut off the lobster's feet, leaving the big feet and throwing away the small feet without meat. Remove the sand intestine from the middle of the tail and the sand sac under the shrimp head. Be sure to keep the shrimp roe.

3. Chop onions, ginger, garlic, pepper, bean paste, soy sauce, and spicy fish seasoning.

4. Heat the pan, add oil, add ginger slices and bean paste, add the spicy fish seasoning and stir-fry until fragrant, then pour in the crayfish, add cooking wine, light soy sauce, garlic and chili peppers, stir well, add some water and cook for about 25 minutes. The spicy crayfish can be served.

Fourth method:

1. Soak the crayfish in light salt water, then scrub it clean with a small brush, remove the sand intestines and sand sacs, and finally rinse it with clean water.

2. Tomato sauce, rice wine, shrimp oil, sugar, light soy sauce, ginger slices, green onion slices, salt, and sesame oil.

3. Wash the pot, heat it, pour in oil and heat it to 50% to 60% hot, add ginger slices and stir-fry until fragrant, pour in shrimps and fry until the surface of the shrimps turns red. Fry on the other side. After frying until red, pour in rice wine and stir-fry evenly, then cover the pot and simmer for one minute.

4. Add tomato sauce and stir-fry evenly, then add half a bowl of water, sugar and salt. Gently toss the lobster in the pan. When the soup in the pot is almost dry, drizzle with sesame oil and the fried crayfish can be served.
