Ingredients: 750 grams of bone-in chicken, 150 grams of chestnut meat, 6 cups of soup, about 1 tablespoon of Shaoxing wine, 1 tablespoon of soy sauce, and appropriate amounts of cornstarch, pepper, and sesame oil.

1. Remove the coarse bones from the chicken and chop it into cubes about 3 cm long and wide. Wash and drain the chestnut meat. Cut the green onions into 3 cm segments. Cut the ginger into thin slices 1 cm long and 1 cm wide.

2. Heat the oil in a pan and fry the chestnut meat until it is 60% cooked. Add the chestnut meat and fry until golden brown. Pour the oil into a colander and drain it.

3. Heat the oil in a pan again, stir-fry the chicken until it is 80% cooked, add the chicken pieces and stir-fry until the water is dry, add Shaoxing wine, then add ginger slices, salt, soy sauce and soup and simmer for about 3 minutes.

4. Take a clay bowl, place a bamboo grate at the bottom, pour the chicken pieces and soup from the wok into it, simmer on low heat until 80% cooked, add the fried chestnut meat, continue to simmer until soft, pour into the wok, add MSG, scallion segments, sprinkle with pepper, bring to a boil, thicken with cornstarch water, and drizzle with sesame oil.

Sichuan cuisine

Ingredients: two chicken legs, a bowl of chestnuts, and a few green and red peppers.

1. Cut the chicken legs into pieces and add cooking wine when blanching to remove the fishy smell. Peel the chestnuts (make a small cut first, then boil them in water for five minutes, they will be easy to peel) and cut them in half.

2. Add oil to the pan and fry the chestnuts until they turn yellow, then remove from the pan.

3. Add half a spoon of sugar to the base oil, dissolve it, then add the chicken pieces, ginger slices and scallion segments and stir-fry. 4. Add chestnuts, stir-fry evenly and add a bowl of hot water. Bring to a boil over high heat, then simmer over low heat for 15 minutes, add salt, and add green and red pepper segments five minutes before serving. Sesame oil and a little pepper.
