Many people cook adzuki beans incorrectly. They just keep cooking them in the pot, thinking that the beans will become mushy if they are cooked for a longer period of time. In fact, doing so completely underestimates the hardness of red beans. You won't be able to cook them even if you cook them for more than an hour. The correct way to cook red beans is to soak them first and then cook them. First wash the red beans and soak them in clean water for a few hours. You can start cooking the porridge only after the red beans swell. If you plan to cook red bean and coix seed porridge, soak the coix seed and red beans together in clean water, because coix seed is also hard and not easy to cook.

After putting the soaked red beans in the pot, add enough water and bring to a boil, turn off the heat, let the red beans simmer in the pot for about half an hour, then boil again, turn off the heat and simmer for about half an hour, open the lid and take a look. The red beans have been cooked.

It is much easier to cook red beans using a pressure cooker. After putting the soaked red beans into the pressure cooker, just use the porridge cooking function and cook until the prompt sound sounds.

No matter how you cook the red bean and coix seed soup, it will not become sticky and thick. The bottom is the cooked red bean and coix seed, and the top is the clear soup.
