What is the recipe for braised lamb legs?

Lamb is a very warming food, and it tastes very good too. However, the taste of mutton in different regions may also be different. For example, the mutton in the south does not have a strong smell, while the mutton in Inner Mongolia has a stronger smell. If you are not a local friend, you may not be able to stand it. In fact, there are many ways to cook mutton. For example, a whole leg of lamb can be stewed directly. So, what is the method of stewing lamb legs?

Method 1: White radish stewed mutton soup

Ingredients: 500g mutton, some white radish, some salt, some white pepper, some ginger, some green onion, some star anise, some coriander

practice:

1. Soak the mutton in water to remove the blood, cut into pieces, and wash clean. Peel and cut the white radish into pieces, slice the ginger, and chop the green onion for later use.

2. Put the mutton into a casserole, add clean water into the pot, put the mutton in the cold water, wait for the water to boil, blanch it, wait until the blood foam and mutton smell are removed, skim off the floating foam and take it out.

3. Rinse the mutton with warm water, drain and set aside.

4. Add water to the clean pot and put in the blanched mutton cubes, green onions and star anise.

5. Bring to a boil over high heat, then reduce to medium-low heat and simmer with lid on for 1 hour.

6. Add white radish cubes. Reduce heat to medium and cook for 30 minutes. Stew until the radish becomes soft and transparent.

7. Turn off the heat and add appropriate amount of salt. And an appropriate amount of white pepper to remove the smell of mutton.

8. Finally, you can garnish with appropriate amount of chopped green onion and coriander according to your personal preference and then serve.

Method 2: Pressure cooker white radish stewed lamb

1. Soak the mutton in cold water for half an hour to remove the blood.

2. Add water to the pot and blanch the mutton.

3. Put oil in the pan and fry ginger and garlic until fragrant, then add the mutton and fry.

4. Add cooking wine and dark soy sauce and stir-fry until fragrant. Add star anise, cinnamon and cardamom.

5. Put the lamb and radish near the electric pressure cooker, add water and salt and cook for about 40 minutes.

6. When the pressed food is ready, put coriander in the bowl according to your personal preference.
