1. Prepare the main materials.

2.1 Use chopsticks to stir until it becomes floc-like and then pour into the bread machine.

3.2 Pour the flour into a stainless steel basin and add boiling water (temperature above 80°C).

4.1212 Start the bread machine's dough kneading program and stir for five minutes to make the dough into a ball (if you don't have a bread machine, you can knead the flour into a ball with your hands, there is no need to knead it until it is smooth).

6. Heat the oil in a pan, turn to low heat and fry the soaked and drained dried shrimps until slightly yellow.

7. Wash the chives, drain and cut into fine pieces.

8.1 Pour the fried dried shrimps into a bowl, sprinkle some chicken essence and mix well (you can omit it if you don’t like chicken essence).

9.2 Put it in a bowl, pour in sesame oil and mix it (this will prevent the chives from releasing water easily).

10. Sprinkle dry powder on the chopping board and knead the dough with sugar into a ball.

11. Cut into two halves and roll into long dough (put the other piece of dough in a bowl, cover it or use plastic wrap to prevent it from drying out).

12. Cut into small dough pieces of the same size (10 pieces).

13. Take a small piece of dough, flatten it with your hands, rotate the dough with your left hand, press the rolling pin with your right hand, and roll it into an oval-shaped dough that is thick in the middle and thin around the edges.

14. Place appropriate amount of filling on the dough.

15. Fold the two sides in half, pinch the middle, and pinch the dough from right to left.

16. Press the dough with your right index finger and use your thumb to pinch it from right to left into a sunflower lace.

17. Brush the ceramic pot with sesame oil and heat the oil until slightly hot.

18. Turn to medium-low heat and add the wrapped raw chive dumplings.

19. Fry one side of the raw chive dumplings until golden brown, then turn over and fry the other side.

20. Then turn down the heat and repeat the process twice.
