How to Eat Morels

Morels are also a kind of fungus, but different from ordinary fungi, because of its shape similar to a sheep's tripe, it is called morels. This ingredient is mostly used to make soup, such as morel stewed chicken. This dish is very common and quite simple to make. However, the morels must be washed several times with cold water before cooking.

Morel Chicken Stew

Ingredients: 1 young chicken, morels, ginger, onions, red dates, wolfberries, salt, and water.

practice:

1. Wash the young chicken and remove the chicken feet and butt. Slice the ginger. Tie the green onions into knots;

2. Pour the scallion, ginger and chicken into clean water and bring to a boil. Wash the morels several times with cool water;

3. After cleaning, soak it in warm water. After soaking it, remove the root part because it contains a lot of sand. Wash several times, drain and set aside;

4. Soak the dates and wolfberries in warm water until softened. At this time, the pot is about to boil, and the blood foam floating on the surface should be skimmed off;

5. Skim off the blood foam and wait for the pot to boil, then put the morels, dates and wolfberries into the pot. After stewing for 1 hour and 30 minutes, add a little salt.

Braised Morels

Main ingredients: 200 grams of morels, 50 grams of ham, and 1 green pepper.

Seasoning: 10g bean paste, 10g soy sauce, 3g MSG, appropriate amount of broth, 10g cornstarch, 5g sesame oil, 25g peanut oil

1. Wash and soak the morels; cut the ham and green pepper into diamond-shaped slices for later use;

2. Place a clean pot on high heat, pour in peanut oil and heat it, add the bean paste and stir-fry until fragrant, add the broth, ham, green pepper, morel, and soy sauce and cook for about 3 minutes, add MSG to taste, thicken with cornstarch and water, and drizzle with sesame oil.

Roasted Pork with Morel Mushrooms

1. Ingredients: 20 grams of dried morel, 200 grams of pork belly with skin, 50 grams of pea sprouts, egg white, soy sauce, salt, MSG, honey, cooking wine, pepper, soybean oil, and water bean powder.

2. Method:

(1) Soak the dried morels in warm water for about 30 minutes and wash them.

(2) Wash the pork belly with skin and cut it into 6 cm square pieces. Add soy sauce, cooking wine and honey and mix well for 20 minutes. Then add egg white and soybean powder and mix well.

(3) Heat the oil in a pan until it is 50% hot, add the pork belly and fry until golden brown. Remove from the pan, leaving some oil in the pan, and add the morels and stir-fry. Add MSG and soy sauce and cook for a while, add broth and bring to a boil, add the pork belly and simmer for about 20 minutes, add chicken essence, pepper, and pea sprouts, and drizzle with sesame oil when done.
