Purple Sweet Potato Shortbread Recipe

Purple sweet potato is also a kind of potato crop, so the starch content in purple sweet potato is relatively high. Since purple sweet potato contains sufficient pigment, many people extract natural pigments from purple sweet potato when making desserts. Steps to make purple sweet potato crisps

First prepare the necessary ingredients:

Ingredients for oil skin: 100g ordinary all-purpose flour, 40g lard, 40g water, 20g powdered sugar

Ingredients for pastry: 80g low-gluten flour, 40g lard, 20g purple potato flour

Filling material: 300g purple potato puree

Decoration: 1 egg yolk, a little black sesame seeds

Steps:

Step 1: Put all the ingredients for the oily dough into the bread machine and knead the dough for 15 minutes (or knead by hand for more than 20 minutes);

Step 2: Cover the kneaded dough with plastic wrap and let it rest for 15 minutes;

Step 3: Knead the pastry into dough, cover with plastic wrap and let it rest for 15 minutes;

Step 4: After 15 minutes, divide the water-oil skin and the oil-flavored pastry into equal sizes and knead them into small doughs. Knead the purple potato puree for the filling into 10 small balls of equal sizes.

Step 6: Cut 5 slits in the pancake with scissors, cut each leaf twice with a knife, and then pinch the top together to form a petal shape; brush the center of the flower with egg yolk liquid and sprinkle with black sesame seeds;

Step 7: Put it in the oven and bake at 165 degrees for 45 minutes (adjust the time according to your oven usage habits, pay attention to observe it after half an hour to prevent it from burning. You can also cover the purple sweet potato crisps with tin foil to prevent it from burning).
