Excessive consumption may cause symptoms such as nausea, vomiting, and diarrhea.

Scientific research has found that the solanine content in unripe eggplant is higher than that in ripe eggplant. The solanine content in eggplants during the peak harvest period is high, while the solanine content in eggplants picked when the vines are about to be pulled out is low. The test also found that the depth of eggplant skin color is closely related to the solanine content in the eggplant, with purple eggplants having a high content and green eggplants having a low content. That is to say, the darker the color of the eggplant, the higher the solanine content. Eggplants that are not fully ripe contain toxic substances

However, solanine does not exist in the eggplant skin, but mainly in the flesh.

Therefore, trying to avoid ingesting toxins by peeling the eggplant is ineffective.

At the same time, solanine is basically insoluble in water, so it cannot be removed by blanching, boiling, etc.

The only way is to control your intake. Fortunately, the solanine content in eggplant is low, and the highest variety does not exceed 0.8 mg per gram of dry weight. Converted into fresh eggplant, if you eat about 450 grams of this high-solanine eggplant, the intake may reach 25 mg. At this time, nausea, vomiting and other discomfort reactions may occur. 400 mg of solanine can be fatal to an adult, so under normal circumstances, eating half a pound of eggplant in one meal will not cause any trouble.

People have heard that raw tomatoes are poisonous, and the trouble is solanine. Eating an 80-100 gram pure green tomato may contain solanine at a level that would make people feel nauseous. However, green tomatoes are not as scary as you might think. As long as you stop eating them, the symptoms will gradually ease. Eating more than 1.15 kilograms will be life-threatening.

Solanine is easily soluble in hot ethanol and almost insoluble in ether, chloroform and water. Used for rescue of infectious toxic shock, organophosphorus pesticide poisoning, pre-anesthesia medication and reducing bronchial mucus secretion.

Solanine is more commonly known as solanine or solanine. It is a bioalkaloid that is mainly found in Kandelia ovata, hence the name. In addition, the content is also higher in the green parts of sprouted potatoes. Since solanine is toxic to the human body, you should be careful when eating vegetables or foods containing this alkali.
