Simple stir-fried eggplant recipe

1/2 long eggplant, some fried shallots, Japanese soy sauce

2. Heat the pan, pour some olive oil, add the fried shallots and stir-fry until fragrant, add the seasoning and stir well, add the eggplant and stir-fry evenly over high heat until the eggplant is soft.

Spicy Fried Eggplant

Material

Oil, chili, onion, salt, sugar, soy sauce, eggplant

1. Peel and clean the eggplant, cut into strips (not too thin) or dices according to your preference, add salt and soak for more than ten minutes.

2. Heat the oil and add chili peppers (you can add meat if you like it), stir-fry the pan with scallions, squeeze out the black water from the eggplant, and stir-fry in the pan.

3. When the eggplant changes color, add salt, sugar and soy sauce to add color, and continue stir-frying until ready to serve.

Tips

Eggplants soaked in salt can remove the astringent taste of eggplant, and the color of the eggplant will be good after frying. You will also find that the eggplants treated in this way will become more sticky and will not fall apart, and they do not consume oil, so you don’t need to add so much oil.

Homemade Fried Eggplant

Eggplant, shredded pork, shredded ginger, green pepper, peanut oil, soy sauce, salt, chicken stock

1. Cut the eggplant into strips, put it in a bowl, sprinkle with salt and marinate for 15 minutes (no need to add salt when frying).

2. Cut the green and red peppers into shreds, and marinate the shredded meat with starch, salt and light soy sauce for a while.

3. Pour oil into the pan and stir-fry shredded ginger.

4. Add the shredded pork and stir-fry.

5. After the shredded pork is cooked , serve.

6. Pour a little oil into the pan, add the eggplant and stir-fry.

7. Stir-fry until the eggplant becomes soft, add soy sauce and a little water and simmer for a while (I like to eat softer eggplant, so simmer it longer).

8. Add the fried shredded pork.

9. Add the green and red pepper shreds and stir-fry for a while.

10. Add chicken essence for seasoning before serving. Stir well and serve.
