How to make passion fruit marble chiffon cake

1. Prepare ingredients: eggs, low flour, passion fruit, milk, cooking oil, sugar, cocoa powder, rum, honey and weigh them.

2. Cut the passion fruit, scoop out the juice and seeds and put them in a bowl

3. Taste it a little. If it feels sour, add 10 grams of honey (optional) and stir well for later use.

4. Separate the eggs and put them in a clean bowl

5. Beat the eggs and add passion fruit juice and cooking oil

6. Then add fresh milk and mix well

7. Then pour in the sifted low-gluten flour and mix evenly. Set aside for later use.

8. Add 2-3 drops of rum to the egg whites to remove the eggy smell

9. Use an electric whisk to beat the egg into large bubbles at high speed, and add sugar in batches.

10. When the bubbles become fine, add the second sugar and continue beating.

11. Add sugar for the third time when the protein is in a flowing state

12. Beat until the egg is whipped up and the tip has a small hook and clear lines.

13. Then take a small amount of egg white, add it to the egg yolk paste, and stir evenly with a spatula.

14. Pour back into the remaining egg whites and continue to stir well.

15. Divide the cake batter into two equal parts, add cocoa powder to one part and mix well, and keep the other part as it is without adding cocoa powder.

16. Prepare an 8-inch removable bottom mold and pour a little cocoa egg paste in the middle (as shown in the picture)

17. Add a small amount of cake batter on the cocoa egg batter (as shown in the picture)

18. Repeat until all the cake batter is poured in. Remember to eliminate bubbles quickly. It does not need to be too round. Marble is an irregular shape.

19. Then hold the mold with both hands to vibrate out the bubbles, and use a toothpick to pull out the flower pattern on the surface from left to right. Repeat several times to complete.

20. Put it into the preheated oven at 150 degrees, bake it in the middle and lower layers for 50 minutes. When the time is up, open the door and poke it in the middle with a toothpick. If there is no liquid flowing out of the toothpick, it is baked. Otherwise, it needs to be baked for a longer time.

21. Take it out of the oven, shake it a few times, turn it upside down and let it cool down completely at room temperature

22. Cool thoroughly and demould smoothly, the marble pattern is clear

23. Use a knife to cut into pieces, soft and elastic, great
