How to make braised pork with bamboo shoots

2. Add a little oil to the pan, put two spoons of crushed rock sugar and stir-fry over low heat until it turns golden brown. Then add the pork belly and stir-fry until it turns golden brown. Then I transfer them to the stew pot, which can be a casserole, a cast iron pot or a pressure cooker, depending on your convenience. Free up the wok for other dishes. I have made braised pork before without adding sugar color, but the color can still be made very rosy. Today I used the traditional method to fry the sugar color as you like.

3. Because I didn’t take a photo of the meat after it was fried with sugar color, I put the meat on top and the bamboo shoots on the bottom to make it easier to see the meat after it was fried with sugar color. In fact, the meat was placed on the bottom. Then add seasoning and rice wine, which are essential for making braised dishes.

4. Soy sauce. The soy sauce in the picture is light in color. I add a little dark soy sauce. If the rock sugar is not enough, you can add some more. If you don't add water like I did before, just use rice wine and soy sauce. Otherwise, add two small bowls of water.

5. Cover with lid and simmer on low heat for more than an hour until it is as tender as you like. You can turn it over halfway to avoid drying the pot

6. Finally, cook over high heat until the sauce is reduced.
