1. Beat the eggs with appropriate amount of salt, then add a little white vinegar and stir evenly.

2. Rinse the sausage with clean water and cut into small pieces. Peel and dice onion.

3. Heat oil in a pan, add diced sausage and stir-fry for 2 minutes, then add onion and stir-fry until 80% cooked.

4. Finally, pour in the egg liquid, and after it is formed, stir-fry it evenly with the sausage and onion.

5. Then sprinkle a little chicken essence.

1) Remove the hard skin from the leek heads, clean and cut into 4cm long segments. Remove the skin of the onion and cut into 1.5cm wide strips. Beat the eggs and pour in. Mix cooking wine and water and set aside.

2) First heat the pan, then pour in the oil and heat over high heat. When the oil is 70% hot, pour in the egg liquid and fry until golden brown. Set aside.

3) Pour some more oil into the pan, heat over high heat, when the oil is 50% hot, add the onion shreds, turn to medium-low heat, and stir-fry until the onion becomes slightly softened (about 1 minute), then add salt and stir well, then pour in the scrambled eggs.

4) Just before serving, pour in the leeks, stir-fry two or three times, and turn off the heat immediately.

1. Chop the onion into small pieces;

2. Take three eggs, beat them into a bowl, and stir them with chopsticks;

3. Add a little salt, put the chopped onion into the eggs and stir together;

4. Turn on the fire, add peanut oil, heat it slightly, and pour the eggs into the pan and fry them.
