How to make colorful bagels

The method of making colorful bagels is very simple. Soak the ingredients in water for half an hour, add red dates, red rice, etc. and boil the water. 1. Pour the yeast into 100 grams of warm water and stir evenly to make yeast water

2. Pour the yeast water into the high-gluten flour and stir. Add the remaining water little by little in several times and stir the flour evenly (the water absorption of flour is different, and the amount of water added varies slightly, so the remaining half of the water should be added to the flour little by little), add sugar, salt and milk powder and mix well, add the butter softened at room temperature, and knead the dough until the fascia can be pulled out. If you have a bread machine, follow the steps for kneading the dough in a bread machine instead.

3. Take a part of the dough and mix it with the purple sweet potato puree. If the purple sweet potato puree is too wet, you can add dry flour to adjust it.

4. Take a small piece of dough and add matcha powder and red yeast rice powder, and knead into a ball.

5. Let the dough ferment until it is 2.5 times larger. The room temperature at home is not high, so I put it in the oven and use the fermentation function for about an hour. I put a pan of water under the oven to ensure humidity.

6. Divide the dough of each color into 5 equal portions. It doesn’t matter how many portions you divide it into, the finished products will just be different in size. Stack the three-color dough

7. Use a rolling pin to knead the dough evenly, making it thick in the middle and thin at the edges like bun skin.

8. Put 30g of jujube paste (I made the jujube paste in advance, other fillings such as red bean paste, lotus seed paste, custard, and durian are all OK) into the dough in a ring shape as shown.

10. Use white dough to roll out skin and wrap it around the colored dough.

11. Poke a hole in the middle of the dough to form a ring (the reason why date paste is made into a ring shape) and put it into the mold, taking up half the size of the mold.

12. If you don’t have a mold, shape it into a donut as shown in the picture and put it into a baking tray. Make the hole in the middle bigger so that the donut will become bigger after a second fermentation.

13. Put it into the oven for secondary fermentation, and let it ferment until it is twice as large and fills the mold.

14. Preheat the oven to 180 degrees, bake at 180 degrees for 5 minutes, until the surface of the bread becomes hard, brush with egg yolk liquid

15. Bake for another 5-7 minutes, adjusting the time according to the size of the bread. After it comes out of the oven, let it cool slightly and remove from the mold. Prevent the bread surface from absorbing water and becoming sticky.
