After blanching the duck neck, take it out and clean the floating foam on the surface with cold water.

Step 3: Stir-fry the ingredients. Pour a proper amount of oil into the pot, add the prepared spices, ginger, onion, etc., stir-fry together until fragrant, then put the duck neck into the pot and stir-fry together, add a proper amount of cooking wine, dark soy sauce and light soy sauce, pay attention to control the ratio of dark soy sauce and light soy sauce. Too much dark soy sauce may make the color of the duck neck too dark. If you don’t like the color of the duck neck too dark, generally add dark soy sauce and light soy sauce in a ratio of 1:2. Pour more hot water into the pot, turn to medium heat after boiling, cover with a lid and simmer slowly, and turn off the heat after about 1 to 2 hours. After turning off the heat, do not open the lid and do not take out the duck neck. Just let the duck neck soak in the marinade. The longer it is soaked in the marinade, the more flavorful the duck neck will be. You can increase or decrease the soaking time as appropriate. It is generally recommended to soak it overnight, so that the duck neck will be more flavorful and have a particularly fragrant smell.
