How to make vegetarian eggplant buns

1. Cut the eggplant into small cubes and add some salt to marinate to make soup!

2. Mix the flour and baking powder, add warm water and knead into a smooth dough!

3. Cover with plastic wrap and let it ferment until it is 2.5 times larger!

4. Pour out the soup from the pickled eggplant and squeeze out the soup with your hands!

5. Soak the vermicelli until soft and chop it into small pieces. Chop the green onion and ginger into fine pieces!

6. Put all the fillings together, add soy sauce, a small amount of salt, chicken essence and sesame oil and mix well!

7. Knead the fermented dough evenly, roll it into long strips, and divide it into small doughs of the same size!

8. Roll it into a round piece with thin edges and thick middle!
