1. Put the flour into a bowl.

2. Pour an appropriate amount of warm water in a circle and stir until it becomes cotton-like.

3. Knead the dough into a smooth dough and let it rise for about 30 minutes.

4. While the dough is rising, prepare the filling: chop the pork, green onion and ginger into fine pieces.

5. Put them together in a container.

6. Add cooking oil, light soy sauce, cooking wine, salt, chicken essence and oyster sauce.

7. Use chopsticks to stir the meat filling in a clockwise direction until it becomes firm.

8. Chop the bitter gourd and carrot into small pieces and add them to the meat filling.

9. Stir well.

10. Knead the dough evenly and divide it into even pieces.

11. Flatten it with your palm.

12. Use a rolling pin to roll it into dumpling skins.

13. Take a piece of dough and put in appropriate amount of filling.

14. Fold it in half and pinch the middle.

15. Pinch out pleats from one side.

16. Change hands and pinch the other side to make pleats. Wrap all the dumplings in turn.
