How to make vegetarian glass dumplings

1. First, you need to prepare the dough. Mix flour and potato starch evenly in proportion, then sprinkle boiling water around the noodles and stir with chopsticks at the same time until it becomes willow catkin-like. Let it stand for about ten minutes, continue kneading it until it becomes a smooth dough, and keep it in a cool place for later use.

2. Next is to prepare the vegetarian filling. Heat oil in a pan, add the prepared chopped green onion, ginger and garlic, stir-fry until fragrant, add the auxiliary ingredients marked with ① and stir-fry for one minute, turn off the heat and let cool (be sure to let it cool, if you add leeks at this time, the leeks will easily wilt and lose their freshness, affecting the appearance and taste).

3. Now prepare the stuffing. I used vermicelli, which needs to be boiled in boiling water for about five minutes, then rinsed with cold water, drained and chopped into pieces, about one centimeter long; prepare and chop the fried eggs; wash and drain the leeks and chop them; pour these three into the oil pan that has been cooled in step 2, add salt and stir evenly, and you can add cooking oil to increase the color and taste.

4. Packaging in progress. Take a small ball of dough, sprinkle a small amount of flour on a board, knead it into smooth long noodles with a diameter of about three centimeters, and cut it into small pieces. When rolling the dough, you can pinch some flour because the dough is sticky. Don't make it too thick to affect the transparency of the dumplings, nor too thin to cause cracks that affect the appearance.

5. Put it in the pot. Place the steamer on the stove, bring water to a boil, soak the steamer cloth in water and wring it out, place it flat on the steamer, and place the dumplings neatly.

6. It’s out of the pot. Steam over high heat for about eight minutes (use this few minutes to prepare the chili oil and vinegar), place on a plate, and enjoy the delicious dish.
