1. How to make cold lotus root slices

The first step is very simple. Just wash and peel the lotus root. Remember to buy the kind with connecting heads at both ends so that there will be no dirt inside. Cut the washed and peeled lotus root into 2-4 mm slices. The thickness doesn't really matter as long as it's not too thick.

Wash the cut lotus root slices with cold water several times first, because there is too much starch in the lotus root, so it will be easier to blanch after washing. Put the washed lotus root slices into boiling water and blanch them for about two minutes. In fact, this process mainly depends on the size of the fire. During the blanching process, you can take out a slice to taste. Just remove the rawness. Do not blanch it too well, otherwise it will not be crispy. In fact, you can also put it in cold water and wait for the water to boil for about a minute, then take it out and rinse it with cold water several times. If it is summer, put the lotus root slices that have been rinsed with cold water in a basin, add cold water to cover the lotus root slices, refrigerate them for a while, and then take them out to make a cold dish. The taste will be better.

Take a small bowl and fill it with 20 to 30 ml of cold water, add the rock sugar cubes and stir constantly until the rock sugar dissolves. Put as much rock sugar as possible here, and it is best to make it into a saturated rock sugar water. Drain the cooled lotus root slices and put them into a mixing container. First pour in the rock sugar water and shredded ginger and stir and marinate for a while. It is best to stir it once or twice during the process. After twenty minutes, add salt, chicken essence, sesame oil, white vinegar, red oil and other seasonings in turn. You can also leave the red oil out according to your personal taste. Because everyone has different tastes, the amount of seasoning cannot be marked too detailed. Everyone can use it as appropriate. It's okay to use less salt, and a little more white vinegar. Not too much chicken essence and sesame oil, as too much will cover the flavor. Then stir it, let it sit for ten minutes, and stir again.

(1) How to cook lotus root fried with meat

[Ingredients] Lotus root, pork belly, ginger, corn starch, soy sauce, pork belly, cooking oil

1. Wash and cut the pork belly into pieces, add appropriate amount of salt, corn starch, soy sauce and cooking oil and marinate for 10 minutes;

2. Peel the lotus root and cut it into thin slices. Peel and shred the ginger.

3. Heat the pan, pour oil in, add the lotus root and stir-fry for a few times, add some water, cover with a lid and cook for 2 minutes, add appropriate amount of salt to taste and remove from the pan

4. Heat another oil pan, add shredded ginger and sauté until fragrant, then add the pork belly. After it changes color, add some water, cover and bring to a boil. Add the fried lotus root and stir fry evenly.

【Ingredients】Lotus root, pork ribs, red dates, ginger, salt

1. Wash and chop the ribs, blanch them in boiling water to remove the blood, then remove them and rinse them with clean water.

2. Peel the lotus root and cut into large pieces; peel and slice the ginger, and wash the red dates.

3. Put the processed lotus root, pork ribs, ginger and red dates into the pot, add appropriate amount of water, bring to a boil over high heat, then simmer over low heat for about 1.5 hours.

4. When the ribs and lotus root are cooked, add appropriate amount of salt to taste.

【Ingredients】Lotus root, sugar, white vinegar, sesame oil, salt

1. Peel the lotus root, clean it and cut it into thin slices

2. Blanch the cut lotus root in boiling water for 1 or 2 minutes, then put it in cold water.

(IV) How to make glutinous rice and lotus root

【Ingredients】Lotus root, glutinous rice, honey, sugar
