How to make Baicai dumplings (mutton and carrot stuffing matcha version)

1. Prepare all the ingredients needed for dough kneading.

2. Take 300g flour, add 1g salt, add 180g water in batches, and make white dough; take 200g flour, add 120g water in batches, and make matcha dough, let it stand for 1 hour to wake up.

4. Prepare the filling ingredients.

5. Grate the carrots into shreds and blanch them in boiling water. After they cool down a little, wrap them in a cloth and wring out the water. Set aside.

7. Cut the green onion into large pieces, put it into a vegetable cutter, add minced ginger and chop it.

8. Soak some peppercorns in water for later use.

9. Add the chopped green onion and ginger into the meat filling and mix well. Add the shredded carrots that have been squeezed out of water and various prepared seasonings and mix well.

10. Take half of each of the two doughs that have risen. Roll the white dough into long strips and the matcha dough into thin slices.

11. Wrap the white flour strips with the matcha flour slices and apply a little water on the joints to make them stick firmly.
