60 ml salad oil

4 teaspoons salt

2 teaspoons soy sauce

2 teaspoons chicken stock

40g ginger

50g garlic

40g Sichuan peppercorns

50g dried chili

2 teaspoons cooking wine

40g scallion

6 teaspoons of white sugar

1 tsp pepper

1 teaspoon salt and pepper

How to stir-fry crayfish

1. Rinse all the crayfish with strong water several times, and then handle them one by one: pinch the back with your left hand, scrub them with a toothbrush under the faucet with your right hand, and cut off the long whiskers

2. Wash all the shrimps and soak them in clean water with a little vinegar. After 10 minutes, take them out and drain them. Be careful not to let them crawl out.

3. Wash the scallion whites and cut into chopped green onions. Remove the roots of the garlic, wash it and cut it into slices. Peel the dried ginger, wash it and cut it into shreds. Remove the roots of the dried chili peppers with scissors and cut them into thin strips

4. Heat the oil in a wok over high heat, add the peppercorns, then fry slowly over low heat. When the oil is boiling, add the dried chili strips and stir occasionally. When the chili shreds are just turning yellow-red, turn to high heat and add shredded ginger, garlic slices, and chopped green onions in turn to release the aroma.

5. Put the drained crayfish into the pot, add cooking wine, then add soy sauce, salt and sugar and stir-fry for 5 minutes

6. Add 1 bowl of boiling water, cover and simmer on low heat. After 8 minutes when the soup is basically dry, increase the heat to high, add chicken essence, white pepper powder and pepper salt powder and stir well.
