How to make mutton and green onion meat pie

1. Add appropriate amount of clean water to ordinary flour and stir until it becomes floc-like. Then knead it into a smooth dough with your hands. Cover it with a lid or a clean wet cloth and let it rest for about an hour.

2. Pour about 30 dried peppercorns into a bowl, add boiling water, and after it cools down thoroughly, it becomes pepper water, set aside.

3. Use chopsticks to break up the mutton filling, and add pepper water in small amounts several times. Stir vigorously in one direction with chopsticks after adding water each time, then add salt and chicken powder and continue stirring until it is strong.

4. Take appropriate amount of scallion and ginger, chop them, put them into the meat filling, add appropriate amount of soy sauce, dark soy sauce, cooking wine, salad oil, sesame oil and white pepper powder to season and adjust the color, and set aside.

5. Take the white parts of two scallions and cut them into small pieces. Mix them evenly with the seasoned meat filling.

6. Divide the dough into several small pieces.

7. Take one of the dough pieces and roll it into a dough sheet. Spread the meat filling evenly on the dough sheet, leaving some space around it.

8. Roll up the dough with meat filling layer by layer. When you reach the last layer, roll up the dough on both sides as well, and then cover with the last layer. The other dough pieces are also processed and shaped in the same way.

9. Pour a small amount of salad oil into the frying pan, put in the wrapped meat patties, fry over medium heat until the skin turns golden brown, then turn over and continue frying the other side until golden brown, then reduce the heat and fry several times until the meat patties are fully cooked.

10. Take the meat patties out of the pot, cut into pieces of appropriate size and place on a plate. The mutton and green onion meat patties are ready, crispy on the outside and tender on the inside, with a strong meaty aroma. If you like it, come and eat it while it’s hot!
