How to make braised pork and carrots

When the temperature difference between morning and evening is large, the gastrointestinal tract becomes very picky, and a good dish is essential. Learning to make braised pork and carrots is a must-have trick for every good mother. Remember to add a small amount of ginger and garlic during the cooking process. Friends who don’t like peppers should not add it, otherwise it will affect the taste.

1. First, wash the pork belly, remove the hair on the skin, and cut it into even pieces.

2. Boil water in a pot, add two spoons of cooking wine, put the cut pork belly into the pot and boil for about three minutes. Then remove from the water and set aside.

3. Prepare all the spices and crush the brown sugar for later use.

4. Pour out the water in the pot, add the blanched pork belly and start stir-frying over low heat (without adding oil)

5. After the pork belly is stir-fried to release some oil, add brown sugar and stir-fry until melted. Keep the heat low and stir fry constantly.

6. After the brown sugar and meat are blended together, add ginger, star anise, cinnamon, and scallion and continue to stir-fry over low heat until fragrant.

7. Add light soy sauce and appropriate amount of braised soy sauce and continue to stir-fry until the sugar color appears.

8. After adding sugar color, pour in clean water about two centimeters above the pork belly and start stewing the meat. Add dried chilies at this time, turn to high heat, cover the pot and simmer. After the water boils for five minutes, turn to medium-low heat and simmer.

9. While the meat is stewing, peel the carrots and cut them into dice for later use.

10. Stew for about 30 minutes, when the soup is half dry, add carrot pieces and stew together. Add appropriate amount of salt to season.

11. After the carrots are cooked, turn to high heat and cook until the sauce thickens.

12. Place on a plate, garnish with chopped green onions and serve.
