1. Prepare the ingredients. This potato is the leftover from the candied potato. The photo has been stored in my phone for a long time. I didn’t have time to edit it, so it took up a lot of space. I deleted it after editing it today.

2. Put the potatoes in a pot and boil or steam them until they are cooked. Take out the cooked potatoes and put them in a bowl. Use a spoon to add sugar to the potatoes. If you like salty taste, you can add salt instead of sugar. Adjust according to your taste and mash them into mashed potatoes.

3. Prepare three bowls in total. Put eggs in one bowl. Crack the eggs and put a little salt in them. It is sweet inside and salty outside, which is a very delicious taste. Put starch in one bowl and coconut flakes in another.

4. After mashing the potatoes, put on disposable kitchen gloves and make the mashed potatoes into pancakes of even thickness. Use a mold to press out your favorite pattern. This is a close-up, and I deliberately made a small round potato pancake skin!

5. Put starch under the mashed potatoes, otherwise it will stick to the counter and become like this after pressing.

6. Put the pressed potato cakes into the egg liquid and evenly coat both sides with the egg liquid.

7. Dip the heart-shaped potato cakes evenly in the egg liquid and put them into the dry starch. Evenly coat both sides with starch

8. Then put it back into the egg liquid and evenly coat both sides with egg liquid.

9. Take out the potato cakes covered with egg liquid, put them in the coconut shreds, and evenly coat the front and back with coconut shreds.

10. Heat the pan with cold oil. When the oil temperature is high, put in the prepared coconut potato cakes. Do not turn them over at this time. Wait for a while until they are set before turning them over, otherwise they will rot.

11. Fry until it turns golden brown and you can serve.
