2. How to make egg yolk dumplings

1. Soak the dried zong leaves in clean water, rinse them several times, and then boil them in hot water to make them soft and clean. After washing the glutinous rice, soak them in water for several hours.

2. Cut the pork belly into small pieces, marinate with salt, cooking wine, dark soy sauce, sugar, oyster sauce and other seasonings, and put it in the refrigerator for one day (I marinated it overnight and one morning). Wash the mushrooms, cut them into small pieces, and marinate them together with the pork belly.

3. Add half a cup of white wine to the salted egg yolks, steam them for 15 minutes, and cut each into two halves after they are cooled.

4. First, pick two complete zongzi leaves, cut off the hard stem at the front, stack the two leaves, roll them up from the middle into a cone shape, and put a date in it first;

5. Add a handful of glutinous rice, a few pieces of meat and mushrooms, and half an egg yolk;

6. Add some rice, cover with meat and egg yolk, pull down the two leaves on the top to wrap the cone at the bottom, tie it up with a rope and put it in the pressure cooker. Add water to cover the dumplings. It is best to put something on top, such as a plate. Cook for an hour, turn off the heat and simmer for a few hours.

1. The pork belly must be marinated for a longer time so that it can be more flavorful. Apart from soy sauce, you don’t need to add other seasonings. If you add too much, the natural flavor of the meat will be lost.

2. Be sure to use pork with alternating fat and lean meat, and the fat should be slightly more pork belly. This way, the fat will almost melt away after cooking, and it will be smooth and refreshing to the mouth, with a long-lasting aroma.

3. You can buy duck egg yolks in boxes. If you don’t have them, you can use raw duck eggs and remove the egg whites. The egg whites can be used to make other dishes.
